Bread is a product that everybody eats. It has to be not only delicious, but also healthy. That what is a grain wheat bread is about. In this paper the results of two experimental studies on the use of sprouted and kibbled wheat in the technology of bread are described.
Grain bread is made from sprouted and specially milled wheat that retains virtually all component parts of the corn. This gives grounds to speak about exceptional food and biological value of such bread.

Mineral fertilizers are the most effective means in increase of productivity and improvement of quality of crops.
91,5 %, tubers of potatoes of 81,7 % and grain of barley of 94,1 % fell to their share in formation of a grain yield
of a winter rye. The crop rotation contribution in formation of a grain yield of a winter rye made 5,82 %, tubers
of potatoes of 5,0 % and grain of barley of 0,2 %. The greatest payback of mineral fertilizers at cultivation of a winter rye and potatoes was in a crop rotation with pure steam, and barley in a crop rotation with sideralny and busy steam.

Mari El Republic refers to biogeochemical provinces, with severe iodine deficiency in the environment and the resulting iodine deficiency disorders characterized by high prevalence and serious clinical consequences.
There are currently many ways to replenish iodine deficiency in the diet by introducing into the food supplements containing the element. But, most of them are inefficient due to low activity of iodine and significant losses during its storage.
The most promising way to prevent iodine deficiency in the present conditions, is a biological process that is providing
the population with products containing natural form of this trace element.
With the introduction of nutrients in the manufacturing process can make the product functional orientation, ie to develop i
t with the specified component composition and enhance its therapeutic and preventive action.
In this connection, a method for correction of iodine deficiency by providing an organic semi-enriched form of iodine-based formulation shpikachek poultry with added hydrated form kelp.
Introduction Laminaria shpikachek formulated at 0,3; 0,5; and 0,7 kg per 100 kg of the basic raw material, allow to provide 100 g of semifinished content of not less than 100 % of the daily need of an adult human in iodine.

Researches showed that in sterns of the Republic of Mari El high degree a kontamination of forages is noted by micromycetes which in favorable agroecological and climatic conditions can be sources of pollution of foodstuff and raw materials their secondary metabolites – mycotoxins. It is established that 17,5 % of forages were toxic, 24,9 % – slightly toxic, and 57,6 % – nontoxical.

The article presents the results of experiments on the cultivation of kefir grains in cheese whey with the purpose of rational use of secondary raw milk and biomass production of kefir fungus for its further use in animal husbandry.
Getting whey and culturing kefir fungus were performed in the laboratory of the Department of technology of meat and dairy products FGBOU VPO «Mari state University».
Positive results were obtained on 3 kinds of cheese whey (natural, defatted, whether salty), there has been a rapid increase
in biomass kefir fungus. The serum of all kinds can be used as a medium for the cultivation of biomass kefir fungus, which can be used for the production of milk replacers for other forage resources in livestock production.
